Applesauce Cake

Applesauce + cinnamon = moist cake! No eggs, butter or milk.
Low in sugar, with lots of flavor.
Easy to put together and out of the oven in 35 minutes. What's not to love about this recipe?

INGREDIENTS:
1 1/2 cups flour
2 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
(3) 4 oz containers applesauce
------------
1/4 cup canola oil
1/3 cup white granulated sugar
1 Tbsp apple cider vinegar
1 tsp vanilla extract
1 diced apple (optional)
DIRECTIONS:
Preheat oven to 350°
Prepare a 9 inch round pan sprayed with non-stick spray.
In a large bowl, combine the first
6 ingredients with a fork.
In a 1 cup measure, add 1/4 cup canola oil and then blend in the sugar, vinegar, and vanilla.
Add to the large bowl of dry ingredients, mixing thoroughly with a fork.
You may add the optional diced apple to the batter. Juici or Honeycrisp works well.
Once all ingredients are thoroughly combined, pour the thick batter in the pan.
If necessary, use a spatula to assist with an even layer of batter within the pan.
Bake for 35 minutes. Toothpick inserted near center should come out clean. Remove from oven and allow to cool on a rack for 10 minutes.
Run a flexible spatula around the edge of the cake in the pan and invert on a plate. Invert again, if you want the flat side down.
Will keep well covered with foil on the kitchen counter for 2 days.
Refrigerate for longer storage.
