Roasted Asparagus

A vitamin packed veggie that is rich in potassium, folic acid, fiber and is great for heart health by acting as a natural diuretic, reducing blood pressure. Simple to steam in 10-12 minutes or roast in 15 minutes with additional flavors of garlic and parmessan. One pound yields 2 + servings.


INGREDIENTS:


1 lb asparagus spears

1 Tbsp extra virgin olive oil

2 Tbsp grated parmessan cheese

2-3 cloves garlic, minced


DIRECTIONS:


Preheat oven to 425°


Wash asparagus and break or cut off bottom third of woody stems.

In a large bowl, mix the spears with the olive oil, parmessan, and minced garlic.

Place in a single layer on a baking sheet lined with foil.

Roast at 425° for 15 minutes.

Remove from oven and place in a serving bowl.

(Goes great with Salmon baked at the same time and oven temperature for a complete one-pan meal!)
